SeeFare – The Admiral’s Thai Lettuce Cups

As featured in this video, here’s the recipe for Admiral Tim’s Underway “Leftovers” Fried Chicken Thai Lettuce Cups.  It’s important to note that this is a variation on one of our favorite dishes, made with the “use-up-what-we’ve got” approach as we were trying to clean out OLOH’s galley in preparation for some yard time.  So yeah, the Admiral was (chicken) winging it.  But boy, were they tasty!

While the Admiral typically goes about this dish a bit differently, this recipe is true to what you saw in the video.

Ingredients:

  • Turkey bacon
  • Sesame oil
  • Chopped, leftover fried chicken (ours was the legendary fried chicken from Dion’s Quik Chik of the Florida Keys with a honey drizzle cooked in)
  • Nutmeg
  • Cinnamon
  • Clove
  • Salt and pepper
  • Fresh red pepper, parsley and onion
  • Iceberg lettuce
  • Fresh lime

Ingredients for drizzle:

  • Soy sauce
  • Chopped pickled ginger with juice
  • Sesame oil
  • Pepper Jelly from the also legendary Miss Michele of Port Royal Landing Marina in Beaufort, SC (or suitable substitute if you’re not lucky enough to know Miss Michele!)

Directions for drizzle:

Mix ingredients together, microwave for thirty seconds, stir well.

Directions for mix:

Season pan with turkey bacon, olive oil and a touch of sesame oil.  Only a touch.  Sesame oil is best used once the food is cooked as a finishing oil.

Add chopped fried chicken.

Add nutmeg, cinnamon, clove, salt and pepper.

Heat quickly and stir well.

Once mix is ready, stir in (but don’t cook) fresh red pepper, parsley and onion.

Scoop mix into iceberg lettuce cups and drizzle with hot pepper soy glaze, top with squeeze of fresh lime, enjoy with your lucky crew!
